chicken soup for the bowl…

Is there anything better then homemade chicken soup on a chilly day? …

No, no there is not.

So I am going to keep this post simple, and to the point.

Here is my recipe.

Chicken Noodle Soup

6 chicken thighs , excess fat trimmed
1/2 large onion, finely chopped
1 large carrot, peeled, finely chopped
1 celery stick, trimmed, finely chopped
4 large garlic cloves, finely chopped
1 Tablespoon thyme
8 cups water
salt and pepper to taste

1/2 package of linguine,  broken into pieces

Combine chicken, onion, carrot, celery, garlic, thyme, water and salt and pepper in a large saucepan over medium-high heat. Bring to the boil. Reduce heat to low and cook, covered, for 40 minutes or until vegetables are very tender.

Use tongs to transfer the chicken to a clean work surface. Hold with tongs and cut the chicken meat from the bones. Discard bones. Finely chop the chicken meat and add to the soup.
Simmer for an additional 25 mins add pasta after 10 minutes. Add more salt to taste. Ladle into bowls, and serve with crusty bread.
